Hannah’s Baby Shower

This is long over due, but I had to get it on the blog. 

About 3 weeks before I was due I finally gave in to having a baby shower for little Miss Hannah.  I had only bought her a pair of hot orange sandals on clearance and a cute little outfit that had xox printed all over it (I love x’s and o’s!) and had been stocking up on diapers at a good deal for months.  The grandmas had been excited for a new little granddaughter so I figured I’d let them fill in the gaps. 

Well, my ward family came through and  granted my wish- we said I was in need of headbands and hair bows!  I’ll let the pics show the proof that this little girl now has quite a collection.  We didn’t play games, just sit around and chit chat.  I’ve come to know and love each one of these sisters and luckily I still keep in touch with a bunch of them from my former ward since we have kiddos and freezer meal groups together.  And we got quite a nice  collection of girlie clothes, blankets, bath stuff, and toys.  I forgot about all the other stuff a baby needs besides diapers!!

Thanks so much for all the wonderful girlie items!  We’re loving them.

Twilight 3 (Eclipse) is coming!

Our Twilight 3 (Eclipse)  Movie Party is set!  Movie is Tues., June 29th at 11:59pm.  I’m hoping we can get a group of 150 so invite your family, friends, and neighbors and keep me posted about your headcount!  And guys are invited too =o)

Cafe Rio Burritos

I’m not really a fan of the restaurant like the rest of the world, but this recipe is really good and feeds a crowd.  It seems a little weird to pour a green sauce on my burrito, but the sauce is what makes it oh so good!  Thanks for the recipe mom!  Thanks for the fun evening friends and family.  While I’m at it, thanks creator of the crockpot!

Cafe’ Rio Burritos

Ingredients:

2 dz. Unbaked tortillas – buy them at Smith’s

3 lbs. Pork Roast

Cook roast with 1 cup of water on low for 9 hrs. (overnight) in a crock pot (or on high while you’re at church b/c you didn’t read the recipe the night before!!) 

When done, drain the water if there is any left.  Shred roast with two forks

 

Add:

¼ Cup Honey Barbecue Sauce (add more sauce if you want it juicer)

¾ Cup Catsup

½ Cup sugar

½ tsp. Garlic Salt

 

GREEN SAUCE – make in blender 

2/3 Cup Salsa Verde – (green salsa)

1 ½ Tbs. sugar

1 tsp. Salt

2/3 Cup Mayo

2 Tbs. Lime Juice

¼ tsp. pepper

Slowly add 1 Cup oil

¼ Cup Cilantro – BLEND

 

Serve the meat from the crock.  Serve green sauce from pitcher.

Mix Romaine lettuce, cut up tomatoes and cilantro in one bowl.

Serve with bowls of shredded cheese, black beans, onions.

 

Cook unbaked tortillas on a pancake grill until bubbly and brown.

Make the burritos with hot tortillas, pork, green sauce and sides. 

SERVES APROX. 24

Freedom!

A new RS presidency was called today.  I’m NOT in it!  So, now that I have all this spare time I think I’ll get a hobby.   Does Facebook count??  Well congrats and good luck President Curtis!  

As for my next calling- I have no clue!  The VT coordinator is now vacant, the RS secretary is vacant, a counselor in Primary is coming up soon, oh and about a million and one primary worker callings need filled!  There’s a few over with boy scouts.  We have no Activities Committee chair people  since they moved.  So, only time will tell, but I’m not complaining, because I have free time!! So, uh, we can be friends now… I’m not off limits anymore!

Oh Happy Days

Can I just tell you that I have had a wonderful day today?  Lately I feel like I have been a bit frazzled and on the pessimistic side with a lot of sarcasm and fake happy emotions going on, but I am loved!!  Someone brought me flowers today and a box of goodies, but it wasn’t my husband.  Don’t worry, it wasn’t from another guy!  And then I had an awesome talk with a friend.  And then came the call from another person in the ward who was thinking of me and has some more goodies for me to go pick up for my kiddo.  And I found someone to watch my kiddos during a double meeting night.  And then I scored 2 Thomas train DVDs at the library when usually there are zero!  And then I scored free 8 foot shelves on Freecycle to hang in the garage.  And even though I’ve only seen my hubby for 45 minutes which was for dinner, car ride to library, and then HOA mtg, I’m not feeling bitter and upet.  He left for work today before I was even up and took off for another job after the HOA mtg.  So thank you people for making my day really pleasant.  I’ll have to pay it forward, that’s for sure!

I Heart TVP

So I was making a chicken with veggie and stuffing covering the top casserole for dinner last night and the chicken was showing no signs of thawing out!  (Yeah, I pulled cooked frozen chicken out of the freezer 10 minutes before starting on dinner!) My solution= ditch the chicken and throw in some TVP sausage from a can that’s in my food storage!!

Results= totally delicious and flavorful!  I will be making this again. And the spices are such a nice treat since I only use salt and pepper pretty much.  So daring, I know!

So I’m totally thinking this would be a great casserole for that sister in the ward who just had a baby!!!  I loved this dish and I think the rest of my ward would too!  I just can’t figure out why I never get called to take in a meal!?!  And I think Dream Dinners should start using TVP meats in their casserole dishes too! A lot more of us would try this dinner service if the price was cheaper.  The more cheaper chicken is called TVP people.

Read more about TVP meat here.  It’s pretty easy reading and just may change your mind about it.  I am half tempted to ditch meat altogether and go TVP all the way baby.

I’ve TVPed the sisters at Enrichment and put the sausage bits in a nacho dip and they loved it.  I’ve TVPed the missionaries and some friends who came over for breakfast for dinner.  Those scrambled eggs had TVP sausage bits in them my friends =o)  And now I’ve TVPed my family members who had no complaints about my casserole.

Who’s next?  Oh, maybe 2 wards at our Emergency Preparedness Fair next month (mwah ha ha ha)!

I’ve Been Tagged!

Four random things I like about my husband:
1. He laughs at me and makes me laugh.
2. He gets Mikey out of the tub, lotioned up, into pjs, reads scriptures, and puts Mikey to bed every night!
3. He is pretty passionate about food storage right now so we both enjoy grocery shopping =o)

1. Courtesy Clerk at Smith’s (loved my farmer’s tan from pushing carts in the Vegas heat!)
2. Reading Tutor (while in college I read with elem. school students and got paid!!)
3. Math Tutor (I was a tutor in the math lab in college and helped those dear students understand math…. To this day I am still surprised I did this… I never thought I was good at math!!)
4. 3rd Grade Teacher- (do we see a pattern yet?)

Summer Lovin’

Pink Ladies

So this is a picture of Patty, me, and Mandy!! We are all SUU graduates who moved to Vegas to be teachers and ended up teaching at the same school for a while. They invited me to dinner to take a break from the boys and we made it a Pink Ladies’ Night and got quite a few stares! So we each wore a pink shirt, khaki knee length modest shorts, and sunglasses on our head! We headed to Applebee’s just to chat more than anything! Sometimes it’s so much fun just to get away and hang with friends for dinner and girl talk =o)

Thanks gals for the fun evening!! Now if I could just get you 2 married off to keep my end of the bargain, right??

I Would Walk 500 Miles…

Blogging is so much fun!  I think I enjoy reading others’ blogs and following the links to all their friends (c’mon I know you do it too!) to see what strangers and long lost people I know are doing in their lives and pick off some cute ideas for my blog. 

I’ve managed to find a ton of people from my home ward growing up, some people who were in previous wards, and there are quite a few people in my current ward who have blogs!  And then there’s the total strangers I’ve come to meet through blogging.  I never thought some of these people would be the blogging type, but that goes to show you what I know!!

I must say that some people have no fears of identity theft, crazy stalkerish people, or the chance that posting too much info just might get you into some trouble down the line.  I haven’t posted as many pics as I’d like because I too have a small “fear” of my site getting into the wrong hands or attracting the wrong kind of people.  Hello, no stalkers please!!

I’m so surprised at the many pictures of houses with nearly everything listed just shy of the street address, families names and birthdays listed, and pictures of naked kiddos!  Are people really that naive to think that nothing bad can or will happen or am I just overly cautious and leery when I see this stuff?  Don’t get me wrong, I am finding that I too have posted too much info myself and haven’t removed it, but I guess when I see it on others’ sites then it makes me realize how unsafe it could be.  There are some psychos out there that would trek 500 miles to your city,  find your house, and do who knows what to your family, so people please…. be more careful and cautious when you post!!  

I guess the easy fix would be to only allow my blog to have log in access, but then how would all you wonderful people find my blog and catch up on my little ole life?  Hmmm.  I’m allowing all to view freely; no restrictions here and hopefully not any time soon!
